Traditional Pizza Sauce

Start with good quality tomatoes! Try some of the imported brands. San Marzano tomatoes are imported from the San Marzano region of Italy and are my favorite.
Open a can of tomatoes and taste it. You may like the taste of one brand over another. I have used all kinds of tomatoes for my sauce so they all work fine for pizza sauce.
Some pizza chefs say that combining the herbs with the tomatoes sauce without cooking it works fine for making a pizza sauce. I find that cooking the pizza sauce for a short while brings out more of the flavors of the herbs.
